How long before and after your match do you hold on to your gels.

I try to grow them a day or two before, mainly to avoid having to drain them at the field. Once grown, drain and then into the fridge (be careful not to freeze them).
We usually use the leftovers for testing and messing around at home, I don’t usually bring gels more than a fortnight old to a game because they lose a lot of their strength and tend to confetti.
